Since the late 1970s, Domaine Morey-Coffinet has quietly built a legacy rooted in Chassagne-Montrachet’s most storied terroirs. Founded by Michel Morey—son of the renowned Marc Morey—and Fabienne Pillot of the esteemed Pillot family, the domaine bridges generations of winemaking tradition. In 2009, their son Thibault took the reins, blending reverence for his heritage with a forward-thinking vision that has placed him among Burgundy’s most respected new voices. Today, he’s known as “the rising star of Chassagne-Montrachet,” leading a new wave of vignerons with his thoughtful, terroir-focused approach.
Thibault’s philosophy is simple but profound: terroir over technology. Since converting to biodynamic viticulture in 2014 and gaining certification the following year, he’s pursued a path of minimal intervention—eschewing sulfur at harvest, favoring gentle pressing, and allowing the balance of the grape to guide the wine. Fermentation and aging take place in a mix of 350-liter oak barrels, amphorae, and egg-shaped vessels, chosen to highlight the saline energy and natural freshness of the Côte de Beaune.
With holdings that include several premier cru vineyards on the prized southeast-facing slopes, Morey-Coffinet crafts whites that radiate mineral-driven precision and reds that express the savory, structured depth of Chassagne terroir. Each vintage, Thibault adjusts his oak regimen to suit the year, seeking expressive aromatics, elegant tension, and longevity. “When the vines are properly cared for, you can take everything from the skin to the seed,” he says. It’s this detailed care—passed down through generations—that defines the domaine’s wines: alive, nuanced, and made to last.
