Deep purple-hued, with great aromatics of cassis, graphite, mint, and tobacco, the 2021 Cabernet Sauvignon is medium to full-bodied and concentrated, showing a focused, elegant mouthfeel, classic 2021 tannins, and a great finish. It will benefit from 2-4 years in the cellar and keep for 15+.

Plush and generous aromas of blackcurrants, blackberry compote, graphite and violets. The palate is full-bodied with bold tannins and balanced acidity, giving notes of blood plums, licorice and spices. Very generous and ripe, with high drinkability. Drink or hold.

A subsidiary label from Odette, Adaptation has produced an easy-drinking 2021 Cabernet Sauvignon, featuring scents of cedar bark and charry oak framing notes of cassis and redcurrants. It's medium to full-bodied, supple, ripe and creamy-textured, finishing with softly dusty tannins and bright red berries. A blend of 77% Cabernet Sauvignon, 22% Merlot and 1% Malbec, it matured 18 months in 50% new French oak (with the balance being in second-use barrels). It's a solid value in the context of Napa Valley Cabernet. (JC)
