The 2007 Farnito Cabernet Sauvignon from Carpineto is another library find that we were able to take advantage of. Grown in estate vineyards near Montepulciano and Chianciano. The wine offers a fantastic look at a mature version of a Super Tuscan wine. In this case 100% Cabernet Sauvignon. It’s an expressive take on an international grape through a Tuscan lens. Grown in estate vineyards near Montepulciano, this wine reflects both the structure of Cabernet and the elegance of central Italy’s terroir. After fermentation with extended skin contact, it was aged in small oak barrels before resting in bottle to develop its full character. Now with over 15 years of age, the 2007 vintage is in a beautifully evolved place, showing the rewards of patient cellaring.
In the glass, it offers a deep garnet hue with hints of color variation at the rim—a visual cue to its maturity. Aromatically, the wine opens with dark cherry, tobacco leaf, and dried herbs, then deepens into notes of leather, balsamic spice, and cocoa. On the palate, it’s structured and generous, with polished tannins and a long, savory finish.
