The 2019 Santa Brígida from Barrialto is a soulful white wine made in Sherry country from old-vine Palomino grown on the chalky slopes of Jerez and Sanlúcar. Produced in tiny quantities in a converted tavern in Sanlúcar’s historic Barrio Alto, this wine captures the spirit of the region without Sherry’s fortification. It’s made from two vineyards both with the famous albariza soil types.
Vinified with minimal intervention, Santa Brígida undergoes spontaneous fermentation with native yeasts in a single 500L ex-Manzanilla butt. It then spends nine months aging on its lees with bâtonnage, before resting in stainless steel and bottling with just light filtration and minimal sulfur. Farming is practicing organic, the vines are bush-trained (because it looks like a regular garden bush. This is the same as head trained) and over 40 years old, and production is extremely limited—just a few hundred bottles make it to the U.S. A. This wine is superb when enjoyed at the table.
